Amber Durum FLOUR

VIGrain are a grain milling and storage facility located in Port Alberni. All profits from grain sales are reinvested back into improving grain harvesting, handling and milling infrastructure for Vancouver Island. One of their goals is to promote interest in growing and marketing locally grown grains.

The grain products that VI Grain sells are of the highest quality. They buy directly from Certified Organic grain farms and do their own milling. These grains are then kept in a refrigerated and humidity controlled environment for the maximum in quality control. This gives  VI Grain the ability to maintain the largest inventory and variety of “Certified Organic” grains on the Vancouver Island.

Amber Duram
Duram in Latin means hard and is the hardest of all Wheats. Its high protein and gluten content as well as its strength makes Duram good for special uses. When ground into flour it is used for making bread or pasta. It is not however, good for making cakes which are made from soft wheat to prevent toughness. Amber Duram seed is larger than other Wheats and is amber colored which mills into an attractive yellow flour with superior flavour.

Canada is the world’s largest exporter of amber durum wheat. According to the Canadian Grain Commission, durum wheat was introduced into Western Canada in the late 19th Century, but the first variety developed in Canada was not released until 1963. A stem rust epidemic in Western Canada led durum wheat production to surge in the 1960s. Durum wheat was less susceptible to stem rust than bread wheat varieties available at that time.

CWAD has been developed to provide superior pasta quality, requiring high levels of hard, vitreous kernels. CWAD wheat varieties possess the yellow pigment content necessary to produce products with a bright yellow colour and also have strong, elastic gluten characteristics to ensure good cooking characteristics. In the Mediterranean and North African region, amber durum wheat is also used for high-quality couscous as well as for durum bread. Canada Western Amber Durum wheat varieties are grown on five million acres in Western Canada through Manitoba, Saskatchewan and Alberta.
