Pearl barley is whole-grain barley which has been polished, or “pearled”, to remove its outer bran. It’s the form of barley most commonly eaten. However, all types of barley can be used interchangeably in recipes.Barley is a heart-smart grain which lowers cholesterol, and is easy to incorporate into your diet. Pearl barley is famously encountered in orzotto, but can also be served in a salad with grilled vegetables and olive oil, or added to soups for a fortifying touch.
