Since corn starch has twice the thickening power of flour, when a recipe calls for flour you may use half as much corn starch to thicken the recipe. Just remember that one tablespoon of corn starch equals two tablespoons flour.

To avoid lumps when using cornstarch, it should be mixed with a cold liquid until smooth before cooking or adding it to a hot liquid. If sauces are made with cornstarch and become overcooked or stirred too long, they will become thin.
