Soft White Winter Wheat, FLOUR

VIGrain are a grain milling and storage facility located in Port Alberni. All profits from grain sales are reinvested back into improving grain harvesting, handling and milling infrastructure for Vancouver Island. One of their goals is to promote interest in growing and marketing locally grown grains.

The grain products that VI Grain sells are of the highest quality. They buy directly from Certified Organic grain farms and do their own milling. These grains are then kept in a refrigerated and humidity controlled environment for the maximum in quality control. This gives  VI Grain the ability to maintain the largest inventory and variety of “Certified Organic” grains on the Vancouver Island.

Soft Winter Wheat
Soft white winter Wheat has been irrigated. It usually has a larger yield than hard Wheat but is lower in protein and gluten. Soft white Winter wheat is used for pastry flour. It is particularly light, and therefore especially useful in making cakes, cookies, pastries or other baked goods that use baking powder, baking soda, or any leavening other than yeast.

Soft white winter wheat has high levels of protein and 50% of your daily value of Iron per 1 cup serving. High in fibre and other important minerals such as Phosphorus and Manganese, this type of wheat is excellent for use in bread and other baked goods such as cakes, muffins, scones, biscuits, and other tender baked goods.  Overall, soft white wheat is favoured for its soft texture and light colour.
